The ritual of cooking pepian, a traditional dish in Guatemala, begins with killing a chicken or rooster. Once the blood has been drained, and the feathers plucked, the bird is cleaned and prepared for the meal. Cut vegetables and spices simmer in a hearty broth with the chicken making a delicious stew.
